TURKEY MEATBALLS MANDARIN | |
1 lb. ground turkey 1 tsp. salt 1 tsp. instant minced onion 1/4 tsp. garlic powder 1 tbsp. chopped pimento 1 tbsp. soy sauce 1 egg 4 c. water 1 tsp. salt 2 tbsp. soy sauce 1/4 tsp. ground ginger 1 pkg. (7 oz.) frozen Chinese pea pods 1 tsp. cornstarch 1 tbsp. water 3 c. hot cooked rice 1 can (11 oz.) mandarin oranges, segments, drained Mix meat, 1 teaspoon salt, onion, garlic powder, pimento, 1 tablespoon soy sauce and egg thoroughly. Shape mixture into 1 1/2 inch ball. In large skillet, heat 4 cups water, 1 teaspoon salt, 2 tablespoons soy sauce and ginger. Place meatballs in seasoned water; heat to boiling. Reduce heat; cover and simmer until meatballs are done, about 30 minutes. While meatballs simmer cook pea pods as directed on package, drain. With slotted spoon, remove meatballs to warm platter. Strain liquid; reserve 1 cup. Mix cornstarch and 1 tablespoon water in same skillet. Stir in reserved liquid. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Arrange meatballs on rice. Arrange pea pods around meatballs; garnish with orange segments. Serve with gravy. Serves 6. |
