HERBED TOMATOES 
6 ripe tomatoes, peeled
1 tsp. salt
1/4 tsp. coarse black pepper
1/2 tsp. dried thyme
1/4 c. snipped parsley
1/4 c. snipped chives or green onions
2/3 c. salad oil
1/4 c. vinegar
Sliced cucumber (optional)

Place tomatoes in bowl; sprinkle with seasonings and herbs. Combine oil and vinegar; pour over. Cover, chill and spoon dressing over it a few times. Drain off dressing to serve. Serves 8. (A peeled, sliced cucumber may be substituted for 2 or 3 tomatoes. The drained dressing may be refrigerated and used again if used within a week.)
