HERBED CHICKEN STUFFED TOMATOES 
2 tbsp. minced onion
6 lg. tomatoes
1 tbsp. parsley flakes
1 tbsp. basil leaves
1 tsp salt
Freshly ground black pepper to taste
2 c. diced cooked chicken or turkey
1/2 c. diced cucumber
1/2 c. grated carrot

Cut a thin slice from the bottom of each tomato. Cut a slice from stem end of each tomato. Scoop out pulp from tomatoes and drain off 1/2 cup of the tomato liquid and set aside. Combine reserved tomato liquid with minced onion, parsley flakes, basil, salt and black pepper and mix well. Stir in chicken, cucumber and carrot. Use about 1/2 cup of chicken mixture to fill each tomato shell. Serve on a bed of lettuce and garnish with radish roses. Makes 6 servings, about 190 calories per serving.
