CORN CAKE 
1 c. cornmeal
1 c. whole wheat flour
1 tsp. lemon extract
1 c. finely shredded coconut
1 c. soy or cashew milk
1/3 c. oil
3 tbsp. honey
1/2 tsp. salt
1 pkg. yeast
1 tbsp. brown sugar
Grated rind of orange

Mix dry ingredients. Scald milk; add honey, brown sugar, oil, and lemon extract. Dissolve yeast in 1/4 cup warm water. Make batter. Pour into oiled 9 x 9 inch pan and let rise until double. Bake at 450 degrees for 10 minutes, then at 400 degrees for 15 minutes.
