CORN CAKES 
4 tbsp. butter, melted
Fat for frying
2 eggs, beaten light
1/2 c. milk
1 (10 1/2 oz.) can cream style corn
1 sm. onion, grated
2 c. prepared biscuit mix

In a bowl, beat the eggs. Stir in the milk, corn and onion. Fold in the biscuit mix, stirring just enough to blend. Stir in the melted butter. Heat a griddle and grease lightly. Ladle a generous spoonful of batter for each cake on griddle. Bake until brown; turn, browning on other side (about 10 minutes). Serve with sausage and syrup.
