CORN BATTER CAKES | |
1 1/3 c. cornmeal, scalded with 1 1/2 c. boiling water 1 tbsp. melted oil 3/4 c. milk 2 beaten eggs 2/3 c. flour 1 tsp. salt 3 tsp. baking powder Add oil, milk and eggs to scalded cornmeal. Sift flour before measuring. Resift measured flour with salt and baking powder. Combine cornmeal and flour mixture. Bake on a hot griddle. Turn cakes once when bubbles start to burst. |
