PEANUT BRITTLE | |
1 1/2 c. sugar 1/2 c. white corn syrup 1 stick butter 2 c. raw peanuts or pecan pieces 1/2 inch cube paraffin Put above ingredients in cast iron skillet. Cook over medium-low heat until peanuts or pecans are done. Remove from heat and immediately stir in 1 teaspoon baking soda. Pour out on a 2 foot length of aluminum foil. Spread and cool. Break into pieces. Store loosely covered. (Be sure to put several layers of newspaper under the foil paper to keep from damaging counter top.) |
