CHICKEN CACCIATORE 
1 clove garlic, mashed
1 slice onion
2 tbsp. oil
4-5 lbs. chicken, cut up
1 (6 oz.) can tomato paste
1 c. hot water
Salt and pepper
1/2 c. sliced mushrooms
1/2 c. red wine, optional

Cook garlic and onions in oil; add chicken and brown on all sides. Combine paste, water, salt, and pepper; pour over chicken.

Cover and cook over low heat until tender, about 45 minutes. Wine and mushrooms may be added if desired. Cook 5 minutes more.
