CHICKEN CACCIATORE 
1/2 c. pancake mix
1/4 tsp. salt
1/4 tsp. pepper
4 boneless chicken breasts
1 can cream of mushroom soup
1/3 c. dry onion soup mix
1/2 c. milk
1/2 c. grated cheddar cheese
Parsley

In a bowl combine pancake mix, salt and pepper. Roll chicken in the mixture to coat well. Place chicken in a 3 quart baking dish overlapping if necessary. Combine mushroom soup, onion soup mix and milk. Blend until smooth. Pour over the chicken. Cover the dish tightly with aluminum foil. Bake at 375 degrees for 1 hour. Remove foil and sprinkle cheese on top. Bake, uncovered 15 minutes or longer. Garnish with parsley if desired.
