EASY CHICKEN CACCIATORE 
2 1/2 - 3 lb. fryer chicken, cut up
2 tbsp. olive oil
2 (14 1/2 oz.) cans stewed tomatoes
1 (6 oz.) can tomato paste
2 c. sliced mushrooms
1 c. sliced zucchini
Hot cooked pasta

Brown chicken in oil, 10 minutes, turning occasionally; drain. Add tomatoes, tomato paste, mushrooms, zucchini and basil. Salt and pepper to taste, if desired. Cover and simmer 25 minutes. Serve over pasta. Makes 4-6 servings.
