CHICKEN JAMBALAYA 
1 (3 1/2 lb.) chicken, cut into 8 pieces
1 lg. onion, chopped
8 oz. tomatoes, chopped
1 green pepper, chopped
2 sticks celery, chopped
8 oz. uncooked rice
4 tsp. chopped parsley
8 oz. ham, cut into strips
Little oil for frying
1 1/2 pts. chicken stock

Fry chicken pieces in oil until golden brown. Remove to a large casserole dish. Fry onion, tomato; stir in pepper and celery. Remove to the casserole dish. Fry rice until golden, adding a little more oil if necessary. Add to casserole, stir together. Cover with stock and simmer in 350 degree oven for 1 1/2 hours. Just before serving, add chopped ham and return to oven to heat through.
