LEMON PINEAPPLE CAKE 
1 pkg. lemon or orange supreme cake mix without pudding
1 pkg. instant coconut cream pudding mix
3/4 c. vegetable oil
4 eggs
1 can lemon-lime carbonated drink

Combine first 3 ingredients and beat at medium speed until well blended. Add eggs, one at a time, beating after each addition. Add lemon-lime drink and mix well. Pour into greased pan - three 9-inch pans or one 13 x 9 x 2 inch. Bake at 350 degrees for 35 minutes. Cool and spread with Pineapple Topping.

PINEAPPLE TOPPING:

1 (20 oz.) can crushed pineapple, not drained
1 c. sugar
3 tbsp. cornstarch
1/4 c. butter
1 can coconut

Combine first four ingredients and bring to a boil. Reduce heat and cook one minute. Cool and spread on cake. Sprinkle with coconut if desired.
