SIMMERED PEACH DUMPLINGS 
1 lg. can sliced peaches
2/3 c. sugar
4 tbsp. butter
1 c. flour
1/4 tsp. salt
1 1/2 tsp. baking powder
2 tbsp. butter
1/3-1/2 c. milk

Put peaches, sugar and butter in heavy pan with tight fitting lid. Bring to boil. Sift flour, salt and baking powder together. Cut fat into flour mixture until texture of cornmeal. Add milk to make drop biscuit.

Drop pieces of dough about the size of pecans over boiling peaches. Reduce heat, cover tightly and simmer for 15 or 20 minutes until dumplings are cooked through. Serve hot with ice cream or cream topping.
