TURKEY-CHICKEN ARTICHOKE MEDLEY 
2 c. chicken broth or bouillon
1/4 c. chopped onion
2 c. cubed cooked turkey or chicken
8 oz. pkg. frozen artichoke hearts, quartered
1 med. carrot, cut into matchsticks
1/4 tsp. thyme leaves
3/4 c. uncooked long grain rice
Salt and pepper

In saucepan, combine broth, onion, turkey or chicken, artichoke hearts, carrots, and thyme. Bring to a boil and add rice Cover, reduce heat and simmer 25 minutes or until liquid is absorbed. Add salt and pepper to taste. Serves 4 at 210 calories each.
