CHICKEN AND WILD RICE CASSEROLE | |
2 chickens or 1 lg. turkey breast 1/2 c. sherry Salt to taste 2 tsp. curry powder 1 onion, chopped 1 c. celery, chopped 2 c. sliced fresh mushrooms 2 tbsp. butter 2 pkg. long grain and wild rice 1 c. sour cream 2 cans mushroom soup Cook chickens or turkey breast. Cool and cut into large pieces. Saute onion, celery and mushrooms in butter. Cook rice according to package directions and add onion, celery, mushrooms, sherry, curry powder, sour cream, mushroom soup and chicken. Bake at 350 degrees for 45 to 50 minutes covered loosely or freeze. Defrost and bake as directed. |
