LEMON TEA MUFFINS 
1 1/2 c. flour
1 tsp. baking powder
1/2 c. butter
1 c. sugar
1/2 lemon, grated (rind)
2 eggs, beaten
1/2 c. milk
1/2 c. chopped walnuts
1/2 tsp. salt
1/2 lemon, grated (rind)
1/4 c. sugar

Sift flour and baking powder. Cream butter; add 1 cup sugar and 1/2 lemon rind. Cream until light and fluffy. Beat in eggs. Add dry ingredients alternately with milk. Stir in nuts.

Mix 1/2 lemon rind and 1/4 cup sugar and sprinkle on top. Bake at 375 degrees for 20-25 minutes. Yields: 10.
