IRISH SODA BREAD 
3 tbsp. softened butter
2 1/2 c. all-purpose flour (don't use self-rising flour)
2 tbsp. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 c. buttermilk
1/3 c. raisins, if desired

Cut butter into flour, sugar, baking soda, baking powder and salt with pastry blender until mixture resembles fine crumbs. Add raisins, if desired. Stir in just enough buttermilk so that dough leaves side of bowl.

Turn dough onto lightly floured surface. Knead until smooth, 1 to 2 minutes. Shape into a round loaf, about 6 1/2-inches in diameter. Place on greased cookie sheet. With sharp knife, cut an "X" about 1/2-inch deep through top of loaf.

In a preheated 375 degree oven, bake until golden brown, 35-45 minutes. Brush with softened butter, if desired. Makes 12 servings of 125 calories each.

You may add some crunchiness by adding 1/2 cup unsalted dry-roasted sunflower seeds or peanuts, just before adding the buttermilk. This will also add calories.
