POTATO BOATS 
2 lg. potatoes, boiled & cooled
2 pieces fried bacon, crisp & crushed
2 tbsp. sour cream
1/2 c. shredded cheddar cheese
1 tbsp. chives

After the potatoes have been boiled and cooled, take a sharp knife and cut a circle in the potato. Then take a spoon and hollow the potato out, leaving very little of the meat of potato around the sides of the skin. Place in hot oil and deep fry until golden brown and slightly crispy.

While still very hot, add half of the sour cream and 2 pieces of bacon, crushed. Sprinkle half of the cheddar cheese and half of the chives over the top. Serve warm.
