RADISSON SOUTH ZUCCHINI FLORENTINE | |
4 med. zucchini squash 1 carrot 2 ribs celery 1 med. onion Garlic, oregano, salt and pepper to taste 1/2 c. sliced fresh mushrooms 1/2 c. tiny whole onions, fresh or frozen 1/2 c. diced tomatoes with juice 1 tbsp. chicken-flavoring base Cut zucchini, carrot, celery, and onion on bias. Saute carrot, celery and onion in butter or oil with garlic, oregano, salt and pepper until vegetables are half done. Add mushrooms and onions and continue cooking until vegetables are 3/4 done. Add zucchini. When all ingredients are nearly done, add diced tomatoes and chicken base. Adjust seasoning to taste. Serves 8. |
