CORNED BEEF SALAD 
1 env. Knox gelatin
1 1/2 c. hot water
2 tbsp. lemon juice
1 (12 oz.) can corned beef
4 boiled eggs, diced
1 (4 oz.) jar mushrooms, sliced
2 c. (or less) diced celery
2 tbsp. minced onion
2 tbsp. pimento
1 c. mayonnaise

Soften gelatin in hot water. Add lemon juice and cool. Mix beef, mushrooms, eggs, celery, onions and pimentos. Add mayonnaise and blend well. Add gelatin mixture and blend well. Pour into square baking dish and chill until "set".
