FETTUCCINE WITH SALAMI AND
ZUCCHINI
 
2 sm. zucchini
2 cloves garlic, crushed
2 tbsp. olive oil
1 tbsp. capers
1/4 lb. salami, sliced thin and julienned
1/2 lb. fettucini, cooked
1/2 c. whipping cream
Fresh ground pepper
Fresh grated Parmesan or Romano
Salt to taste

Slice the zucchini and then julienne, cut diagonally in matchstick size pieces. Heat the oil and garlic. Add zucchini and saute for 3 minutes. Add remaining ingredients except fettucini and cheese. Heat and mix thoroughly. Serve over the hot pasta, top with cheese.
