THE BEST SCALLOPED POTATOES
(MICROWAVE)
 
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
3 1/2 to 4 c. thinly sliced white potatoes (about 3 med.)
2 tbsp. minced onion

Place butter in 1-quart measuring cup. Microwave on high 1/2 minute or until melted. Blend in flour and seasonings. Gradually stir in milk. Microwave on high 8-10 minutes, stirring every 4 minutes.

Layer half of potatoes, onion, and sauce above in 2-quart greased casserole. Repeat layers. Cover. Microwave on high 17-19 minutes. Remove from oven and let stand 5 minutes before serving. If desired, sprinkle with paprika and/or 1/2 cup shredded sharp cheese after cooking. Cheese melts as casserole stands.

Since microwave ovens vary in power, you may need to adjust your cooking time.
