HAM AND POTATOES AU GRATIN 
1 onion
2 tbsp. oil
1/4 c. butter
1 garlic clove
1/4 lb. sliced cooked ham
2 eggs
1 c. milk
3/4 grated Cheddar cheese
Salt and pepper
1/4 tsp. grated nutmeg
1 lb. potatoes

Heat oven to 375 degrees. Peel and chop onion. Heat the oil with half the butter in a skillet, add the onions and when it softens, add the garlic, peeled and chopped. Cut the ham into matchsticks or chop. Add it to the onion, heat through and keep warm. Meanwhile, beat the eggs and add the milk, cheese, salt, pepper, and nutmeg. Peel and grate the potatoes. Squeeze excess water. Blanch them 4 minutes in boiling salted water. Drain well and add grated potatoes to the egg mixture. Stir well. Add the ham and onions. Lightly butter a shallow ovenproof dish and fill with mixture. Dot the top with remaining butter. Bake 30-35 minutes, browning the top for 5 minutes under the broiler.
