BLACKBERRY COBBLER | |
8 c. fresh blackberries 2 1/4 c. sugar, divided into 1/4 c. and 2 c. 2 c. flour 1/2 tsp. salt 1 tbsp. baking powder 1 stick butter 1/2 c. milk 2 eggs, beaten Combine 1/4 c. sugar, flour, salt, and baking powder. Cut butter into dry ingredients until it resembles coarse crumbs. Add milk and eggs; stir just to moisten. Place 8 c. fresh blackberries into a 9 x 12 inch glass baking dish. Sprinkle with 2 cups of sugar. Spoon 12 mounds of batter over the berries. Bake at 400°F for 20 to 25 minutes. Serve warm with ice cream. Serves 12. |
