RICE SURPRISE 
1 cup rice, cooked in 2 cups chicken broth or bouillon
1 cup sour cream
1 1/2 Tbsps. jalapeno pepper, minced and seeded
1 1/2 Tbsps. jalapeno pepper juice
1/3 cup creamy Italian dressing
1 (6 oz.) can sliced and drained water chestnuts
1 (12 oz.) pkg. Monterey Jack cheese, grated

Grease a 2 quart casserole. Add ingredients that have been mixed well. Loosely cover casserole and bake at 350 degrees for 25-30 minutes. Serves 6-8. Freezes well.
