GROUND BEEF AND EGGPLANT SKILLET 
1 lb. ground beef
1 clove garlic, crushed
1 eggplant, peeled and cubed
1 green pepper, chopped
1 onion, sliced
2 c. tomatoes
1 c. tomato sauce
1/2 tsp. salt
Dash of pepper
1 tsp. basil
1/2 tsp. oregano
1 c. brown rice, cooked

Brown beef and garlic; discard garlic. Add eggplant; stir and cook 10 minutes. Add remaining ingredients. Cover and simmer 25 minutes, stirring occasionally. Serve over rice. May be made ahead and reheated.
