MARINATED LAMB ROAST | |
1/2 c. oil 1/3 c. vinegar 2 tsp. salt 1/2 tsp. pepper 1/4 tsp. thyme, crushed 1/4 tsp. marjoram, crushed 1 clove garlic, minced 5-6 lbs. leg of lamb Mix oil, vinegar and seasonings. Prick the lamb in several places, then place in a bowl and pour marinade over it. Marinate for at least 6 hours in refrigerator, basting frequently with the marinade. Drain, and place in a roasting pan. Roast in a 325 degree oven 25-30 minutes per pound or until meat thermometer registers 175 degrees (medium). Add the marinade after 30 minutes roasting time, and baste frequently thereafter. 6-8 servings. |
