ZUCCHINI & EGGS 
2 c. zucchini, sliced thin
1 onion, chopped
1/2 tsp. salt
1/4 tsp. garlic salt
3 tbsp. butter
4 eggs
American cheese

Saute zucchini, onion and garlic salt in butter until tender. Beat eggs, add salt, pour over zucchini. Cover eggs with sliced American cheese. Cover pan and simmer until eggs set.

NOTE: This is the best zucchini recipe I've ever tried, and surely the virtue of eating zucchini counteracts the cholesterol!
