WHITE SAUCE 
THIN:

1 tbsp. butter
1 tbsp. flour
1/4 tsp. salt
1 c. milk

MEDIUM:

2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1 c. milk

THICK:

3 tsp. butter
3 tsp. flour
1/2 tsp. salt
1 c. milk

Melt butter, add flour and blend, but do not brown. Add milk and stir over moderate heat until mixture is smooth and thickened. To make Cheese Sauce, add 1 cup freshly grated cheese to above white sauce and stir until melted.
