FROZEN BUTTERSCOTCH DESSERT 
2/3 c. sugar
1/4 c. water
1 egg white, unbeaten
1 tsp. lemon juice
1 tsp. vanilla
1 c. whipping cream, whipped, OR 1 container (8 oz.) Cool Whip
1 pkg. (4 oz.) butterscotch pudding
1-1 1/4 c. milk
3/4 c. nuts, chopped (if desired)

In large mixing bowl. combine sugar, water, egg white, lemon juice and vanilla. Beat on high speed until peaks form (about 5 minutes). Fold in whipped cream (or Cool Whip). Combine pudding mix and milk. Fold into whipped cream mixture. Add 1/2 cup nuts (if desired). Turn into dish and sprinkle remaining nuts on top. Freeze. Makes 6-8 servings.

Variations: May use other flavors of pudding instead of butterscotch.
