CORNISH HENS OVER WILD RICE 
2 Cornish hens (1 1/2 lbs. each)
1 (6 oz.) box UNCLE BEN'S® long grain & wild rice
2 c. water
1 (4 oz.) can mushrooms, drained
2 stalks celery, chopped
1/2 stick melted butter

Place rice and seasoning packet in 9"x13" pan. Add water, mushrooms and celery. Cut hens in half and place breast side up over the rice. Brush with melted butter. Salt and pepper to taste. Cover with foil and bake at 375 degrees for 1 hour. Uncover and bake an additional hour at 350 degrees.
