IMPOSSIBLE CHOCOLATE PIE
CRUST:

1 cup all-purpose flour
1/2 cup (1 stick) butter
1/2 cup confectioners' sugar

Preheat oven to 325°F.

Mix the flour, butter and confectioners' sugar all together; press into a 9x13-inch pan.

Bake at 325°F for 15 minutes.

FILLING:

2 cups milk
4 eggs
1 cup granulated sugar
1/2 cup all-purpose flour
1/4 cup (1/2 stick) butter, softened
1 tsp. vanilla
1/2 tsp. salt
1 1/4 cups chocolate chips, melted
whipped cream, for garnish

Increase oven temperature to 350°F.

While crust is cooling, place all of the filling ingredients into a blender. Blend the milk, eggs, sugar, flour, softened butter, vanilla, salt and melted chocolate chips thoroughly; pour on top of the crust.

Bake at 350°F for 35 to 45 minutes (the longer, the better, as it may separate otherwise).

Top with whipped cream and serve.

Valentine's Day variation: Tint the whipped cream with red food coloring and sprinkle candy hearts on top.
