HOT-MILK SPONGE CAKE 
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
2 tbsp. butter
1/2 c. hot milk
2 eggs
1 c. sugar
1 tsp. vanilla

Sift together flour, baking powder and salt. Add butter to milk and heat. Beat eggs until thick and lemon colored, about 3 minutes at high speed on mixer. Gradually add sugar, beating constantly at medium speed 4-5 minutes.

Quickly add sifted dry ingredients to egg mixture and vanilla; blend well. Pour into greased round pan. Bake at 350 degrees for 25-30 minutes. Cool cake in pan 15 minutes. Remove to rack.

Great cake for strawberries or for baked Alaska. Add ice cream to center. Whip egg whites until stiff. Ice cake and brown under broiler.
