HOT WATER SPONGE CAKE 
1 1/4 c. cake flour
1 1/2 tsp. baking powder
1/2 tsp. salt
3 eggs (1/2 to 2/3 c.)
3/4 c. sugar
1/3 c. hot water
1 tsp. vanilla
1/2 tsp. lemon flavoring

Heat oven to 350 degrees. Grease and flour a square 9 x 9 x 1 3/4 inch pan. Blend flour, baking powder, and salt; set aside. Beat eggs in small mixer bowl until very thick and lemon colored. Pour into large mixer bowl and beat sugar in gradually. Blend in water and flavorings slowly. Quickly and thoroughly blend in dry ingredients. Pour into prepared pan. Bake 25 to 30 minutes or until cake tests done. Cool.
