EASY, JUICY CROCK-POT MEATBALLS
2 lb. ground beef (80/20)
2 egg yolks
1 tbsp. Italian seasoning
1 tsp. garlic seasoning
1/2 cup +/- breadcrumbs
non-stick cooking spray (I like olive oil Pam)
6 cups beef broth (48 oz. can or beef bouillon mixed with water)

Mix together meat, egg, seasonings, and bread crumbs.

Spray cookie sheet with non-stick cooking spray liberally.

Form meat mixture into 1-inch balls and place on the cookie sheet.

Spray meatballs with cooking spray to seal in moisture.

Move oven rack to the third lowest position and turn broiler on high.

Broil meatballs just until browned nicely (about 5 to 10 minutes.)

Remove and place in Crock-Pot. Cover with beef broth and cook on LOW for 6 to 8 hours, covered.

Remove with slotted spoon and serve!
