OVEN FRIED SCALLOPS 
1 lb. scallops
2 tbsp. vegetable oil
2 tbsp. lemon juice
1 egg, slightly beaten
2 tbsp. water
Dried bread crumbs
Paprika
2 oz. melted butter
1 lemon, sliced for garnish

Clean scallops and marinade for at least 1 hour in oil and lemon juice mixture. Stir occasionally. Drain scallops. Dip in egg and water mixture. Roll in bread crumbs with seasonings. Arrange in shallow baking dish, pour melted butter over scallops. Bake at 450 degrees for 15 to 20 minutes. Should be brown and crispy.
