POTATO LEEK SOUP | |
1 c. sliced washed leaks 3 tbsp. butter 4 c. water 2 med. size potatoes (1 lb.), pared and cut into 1/8 inch slices 1 sm. grated onion 2 tbsp. minced parsley 1 bay leaf 1 tsp. salt 1/4 tsp. pepper Croutons, chopped parsley 1. Saute leaks in butter in large saucepan until soft not brown (5 minutes). 2. Add water, potatoes, onion and spices. Bring to boil, lower heat, cover, simmer until potatoes are soft (50 minutes). 3. Puree, part at a time, in blender. 4. Garnish - croutons and chopped parsley. 4 servings. |
