BANANA OATMEAL COOKIES | |
1 1/4 c. sugar 3/4 c. shortening 1 egg 3 very ripe large bananas or 4 very ripe small bananas 2 1/3 c. old fashioned oatmeal 2 1/4 c. all-purpose presifted flour 1/2 tsp. salt 1/2 tsp. baking soda 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/2 c. chopped pecans (optional) Cream sugar and shortening with mixer. Add egg. Cream again. Mash bananas and add. Cream. Mix slowly while adding oatmeal. Combine flour, salt, soda, cinnamon and nutmeg. Fold into creamed ingredients. Add pecans. Spoon onto greased cookie sheet and bake at 400°F for 12 to 14 minutes or until golden brown. Cool completely. Store in tight container to keep moist. |
