SPINACH SALAD 
1 lb. fresh spinach, wash, torn into bite size pieces
8 green onions, sliced (scallions)
8 slices bacon, fried crisp and crumbled
2 eggs, hard boiled and sliced
1/4 to 1/2 lb. fresh mushrooms, sliced
Fresh grapes, cut in half

DRESSING:

1/3 c. peanut oil
2 cloves garlic, crushed
1 egg
4 tsp. sugar
1/4 tsp. tarragon leaves, crushed
1/8 c. red wine vinegar
Salt and pepper to taste

In a small pan heat the peanut oil and garlic until quite warm. Whip the egg, sugar, tarragon and vinegar together in a small bowl and slowly pour into warm oil, stirring constantly until slightly thick. It will coat your spoon.

Pour the dressing over the spinach and mix well, then toss with the onions, bacon, hard boiled eggs and mushrooms. Serve at once. Serves 4.
