INDONESIAN PORK STIR FRY WITH RICE | |
1 1/2-2 lbs. lean pork, cubed 1/2 c. vegetable oil 1 tbsp. garlic, minced 1 tsp. ginger powder 1 tsp. coriander 1 c. onion, diced 1 1/2 tsp. cumin 1/2 tsp. shrimp paste 1/3 c. Indonesian soy sauce 2/3 c. water 6 tbsp. brown sugar 1/2 c. green onion, chopped 1/2 c. rice, raw May be obtained from an import food store. Heat oil in wok or large saute pan. Add shrimp paste and pork and stir until pork is light brown. Add onions and garlic and mix well. Add ginger, coriander, cumin, brown sugar, and soy sauce. Stir for about a minute and add water. Turn down heat and simmer for about 15-20 minutes, stirring occasionally. Meanwhile, prepare rice as you normally would or follow the directions on the box. Serve the pork over rice and garnish with the chopped green onions. Serves: 4-6. (Prep and Cooking Time: 20-25 minutes) |
