PASTITSO 
1 lb. fusilli pasta
1 lb. lean ground beef
1 lg. onion, chopped
1 (6 oz.) can tomato paste
2 tsp. cinnamon
1/2 tsp. nutmeg
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
12 oz. sharp cheddar cheese, grated
2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk

Cook and drain pasta. In large saucepan combine and cook onion, meat, tomato paste. Add garlic, cinnamon, nutmeg, salt and pepper. In separate saucepan, melt butter. Add flour until thick paste forms. Gradually add milk and stir over medium heat until mixture is hot. Add grated cheese and continue stirring until sauce thickens. Mix about 4 tablespoons of meat mixture with pasta; layer pasta and meat alternately, starting with pasta, in 9 x 9 inch baking dish. Pour cheese sauce over all and bake at 225 degrees for 1 hour. Multiplies well.
