WALDORF SALAD AND DRESSING 
1/2 c. lemon juice
1/2 c. pineapple juice
2 whole eggs, well beaten
1/2 c. sugar
Pinch of salt
1/2 pt. whipping cream, whipped

SALAD:

Chopped apples
Chopped celery
Chopped walnuts or pecans

Cook lemon juice, pineapple juice, salt, eggs and sugar in saucepan until thickened. Cool and fold in whipping cream, whipped very stiff. Serve over salad ingredients. Store dressing covered in refrigerator.

I was absolutely delighted to find a "no mayo" dressing. This dressing places the salad firmly in the "dessert row". But who cares? It is absolutely glorious. And I plan to use this dressing on other fruits. It's that good.
