LENTIL STEW 
2/3 c. lentils
1 can stewed tomatoes
1-2 sliced carrots
1 lg. onion, chopped
1 green pepper, chopped
1-2 stalks celery, sliced
1 clove garlic or garlic powder
Basil
Parsley
1 (8 oz.) can tomato sauce
Pita bread
Shredded Cheddar cheese

Soak lentils about 3 hours. Rinse and drain. Add rest of the ingredients. Cook slowly about 3 hours. Add 1/2-1 cup water as needed. Serve in pita bread with shredded cheese.
