MINI CHEESECAKES 
5 eggs
1 1/4 c. sugar
3 (8 oz.) pkg. cream cheese, softened
2 tsp. vanilla
1 pt. sour cream

Mix together sour cream, 1/4 cup sugar, and 1/2 teaspoon vanilla. Beat until glossy, about 2 minutes. Set aside.

Mix eggs, 1 cup sugar, cream cheese, and 1 1/2 teaspoons vanilla. Fill miniature muffin tins 3/4 full. Bake 20 minutes at 350 degrees. Cool 10 to 20 minutes. Cakes will drop and crack. Top with a tablespoon or so of sour cream mixture. Return to oven for 5 minutes. Cool and serve. Makes about 50.
