ZUCCHINI PARMESAN 
6 med. zucchini
3 c. bread crumbs
1/2 c. Parmesan cheese
1 sm. onion, minced
3 tbsp. parsley, minced
1 tsp. salt
Dash of pepper
2 eggs, beaten
2 tbsp. butter

Wash zucchini, cut off ends (do not pare). Cook whole zucchini in boiling water for 5 minutes. Halve lengthwise; remove pulp with spoon. Combine pulp with bread crumbs, cheese, onions, parsley, salt, pepper and eggs. Mix thoroughly and fill zucchini shells. Dot with butter. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes.
