NO-BAKE BUTTER MINTS 
1/4 c. butter, softened
1/3 c. light corn syrup
1 tsp. mint flavoring
Pinch of salt
Food coloring
1 lb. powdered sugar, sifted

In small, narrow-bottomed bowl combine softened butter, corn syrup, flavoring, salt and enough food coloring for desired color. (Recipe will lighten considerably when sugar is added.) Mix thoroughly.

In large mixing bowl, sift powdered sugar once. Add syrup mixture all at once. Work with clean, dry hands until dough is smooth. Pinch off a piece and roll into a ball approximately 1/2 inch in diameter. Press with the tines of a fork until it is approximately 1/4 inch thick. Continue process until dough is gone, working quickly because dough will dry slightly and begin to crack when pressed. Allow mints to stand at least 2 hours (or overnight) until dry. Store in layers separated by waxed paper in airtight container. Yields approximately 6 dozen.

Note: Working 4 or 5 pieces at a time goes faster. Cover remaining dough with a damp (almost dry) cloth to help slow the drying process while working.
