ZUCCHINI PICKLES 
1 gallon zucchini pickles
1/4 c. salt
3 c. white vinegar
5 c. sugar
1 tsp. celery seed
2 tbsp. mustard seed
1 tsp. turmeric
5 or 6 onions, sliced thin
2 green peppers, diced
1 red pepper, diced

Mix together zucchini and salt; mix with ice cubes, drain well. Mix together vinegar, sugar, celery seed, mustard seed, and turmeric. Boil. Add onions, green peppers, and red pepper. Mix together. Add zucchini. Bring to boil, simmer 3 minutes.
