ZUCCHINI SQUASH PICKLES 
5 lbs. zucchini
3 med. onions, sliced thin
1/2 c. pickling salt

Wash, slice zucchini. Combine with onions and salt. Put ice cubes on top and cover for 3 hours. Drain and rinse. Combine zucchini mixture with: 3 c. sugar 2 tsp. celery seed 2 tsp. mustard seed 1 1/2 tsp. turmeric 1 tsp. ginger 1/2 tsp. pepper

Heat to boiling, then simmer for 2 minutes. Fill sterilized jars. 6 pints.
