ZUCCHINI PICKLES 
8 to 12 sm. zucchini (do not peel), cut out the seeds from the larger ones
1 med. onion per qt. jar
4 c. white sugar
4 c. vinegar
1/2 c. salt
2 1/2 tsp. mixed pickling spice

Wash and cut squash like watermelon pickles. Put in jars and add sliced onion. Mix other ingredients in bowl to dissolve sugar. Fill jar to 1/8 inch on top. Refrigerate. They get crisper as time goes on.
