HERB CANDY | |
4 c. boiling water 2 c. herb leaves with stems and blossoms or 3 seeds 3 c. each granulated and brown sugar 1/2 tbsp. butter Pour boiling water over herbs or seeds and steep for 10 minutes or longer for a very strong tea. Strain. Add sugar and butter; bring to boil over medium heat. Cook until syrup hardens when dropped into cold water. Pour into buttered pan. Score into squares before it sets or break into pieces as soon as it sets. Store in airtight container. Herbs to try: Horehound, any mint, lemon verbena, lemon, catnip. Seeds to try: Fennel, anise, caraway, coriander, star anise. |
